In honor of Easter Sunday, I am posting my mom's famous dessert she makes every year. 

DISCLAIMER: Please read entire section of directions before proceeding to measure out ingredients or mix anything.

2 cups crushed pretzels, strained
3/4 cup of melted butter
1 cup sugar, plus 4 tbsp of sugar
1 (8oz) package of cream cheese
2 cups of Cool Whip
1 (6oz) package of strawberry Jello
1 package of frozen strawberries (16 oz)

Bottom Layer: Place pretzels in a plastic bag and crush with a rolling pin. Strain. The pretzels should measure 2 cups after crushing. Mix pretzels with melted butter and 4 tbsp of sugar; press in bottom of glass dish (13x9x2 inch). Bake at 350 degrees F for 8 minutes. Cool.
Center Layer: Mix cream cheese with 1 cup of sugar. Add 2 cups of Cool Whip. Beat until smooth and spread over pretzel base.

Top Layer: Mix package of strawberry Jello, using 2 cups of boiling water and 1 pint of frozen strawberries (partially thawed). Let this set until thick enough to pour over center layer. Chill thoroughly before serving.

Peanut Butter Snickers Cookies

As you can see, there is caramel oozing out of the top of this cookie and you are probably wondering to yourself, what is this little piece of heaven??? Well folks, this is a peanut butter chocolate chip snickers cookie. Yes there is a snickers piece of candy in the middle! How do you make these wonderful concoctions, you ask? Well, let me give you the recipe :)

1/2 cup butter
1/4 cup sugar
1/2 brown sugar
1 egg
1 teaspoon vanilla
3/4 cup of peanut butter
1 cup of flour
1 teaspoon baking powder
pinch of salt
1/2 cup of chocolate chips
approx 12 snickers

Liz and I used 18 snickers, just for a heads up! Also, buy the big bag because these cookies are so amazing you are going to want to make two batches! We also contemplated different candies to put in the middle, so those will be soon to come! In the first batch we made we didn't have enough regular peanut butter so we added some natural peanut butter. The second batch we made was all regular peanut butter. The second batch was greasier than the first and also tasted better!
DISCLAIMER: DON'T USE NATURAL PEANUT BUTTER BECAUSE YOU WILL NOT GET A FOODGASM!


Directions
1. Preheat oven to 375 degrees F.
2. In a large mixing bowl, cream butter and sugar until fluffy and light. Add the egg, vanilla, and peanut butter. Beat until smooth. Mix in the flour, baking powder and salt (not all at once). Stir in chocolate chips.
3. Take a large chunk of dough, flatten on baking sheet and place snicker in the middle. Wrap dough around the snicker until it is covered. Space 1'' apart on baking sheet.
4. Bake for about 12 minutes until cookies turn light brown color and the bottoms will slide off baking sheet.

Also, it called for using parchment paper on the baking sheet. We didn't so I don't think it's 100% necessary.

White Chocolate Chip Crasin/Butterscotch Oatmeal Cookies

I made these cookies with none other than my best friend, Liz. They were absolutely delicious! Here's the recipe if you want to try to bake them at home :)

1 cup of butter
1 cup of brown sugar
1 cup of white sugar
2 eggs
2 teaspoons of vanilla extract
3 cups of all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups rolled oats
2 cups white chocolate chips
After using all of these ingredients, we split the dough in half and added 1/2 a cup of crasins to one half and a 1/2 cup of butterscotch chips to the other half of the dough. You can choose to add, I would imagine, almost anything in place of these two ingredients.

Directions:
1. Preheat oven to 350 degrees F. (We used a convection oven to baked our cookies. Lower the temperature by 25 degrees, but use the same baking time). Lightly grease cookie sheets.

2. In medium bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the egg and vanilla. Sift together the flour, baking powder, baking soda and salt, stir into creamed mixture. Finally, stir in the rolled oats, white chocolate chips and any ingredient you choose. We choose crasins and butterscotch chips.

3. Bake for 10-12 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.


Sac O Subs Burger, Ocean City, NJ

1/3 pound burger with American cheese, LTO and ketchup. Simple, but delicious :) Of course with a side of french fries!
